In honor of today being Mexican Independence Day and the second day of Hispanic Heritage Month, I have a special treat to share with you today…Gelatina Tricolor.
Gelatina Tricolor, also known as Gelatina de Mosaico, is a very popular dessert in Mexico. It’s even served in place of ice cream at birthday parties.
During the month of September and other patriotic holidays, it is prepared with the colors of the Mexican flag: Red, white and green. Just looking at it, makes me want to shout…Viva Mexico!!!
- 1 (6oz.) box strawberry gelatin
- 1 (6oz.) box lime gelatin
- 1 (14oz.) can sweetened condensed milk
- 1 (12 oz.) can evaporated milk
- 4 cups milk
- 1 cinnamon stick
- 4 tablespoons unflavored gelatin
- 1/3 cup cold water
Prepare each box of flavored gelatin according to package directions, using only 3 cups of water instead of 4. In 2 medium bowls, dissolve each box of gelatin in 1 cup of boiling water. Stir in 2 cups of cold water into each bowl. Pour the gelatins into two 9-inch square baking dishes. Refrigerate overnight or at least 3 hours until the gelatin has set.
In a medium bowl or large measuring cup, combine the sweetened condensed milk and evaporated milk. Refrigerate until ready to use.
In a 2-quart saucepan, heat the milk with the cinnamon stick just until it starts to boil. Remove from heat and remove the cinnamon stick. Let cool about 5 minutes.
In a small bowl, dissolve the unflavored gelatin in the 1/3 cup cold water and let set for 5 minutes.
Stir the refrigerated sweetened condensed milk and evaporated milk into the hot milk; set aside.
Microwave the unflavored gelatin for 45 seconds, stopping every 10 to 15 seconds to stir, until the unflavored gelatin has melted. (If you don’t have a microwave, set the bowl on top of a cup of boiling water, stirring until the gelatin dissolves.) Pour the unflavored gelatin into the milk mixture. Let the milk cool to room temperature. (About 20 minutes, maybe longer.)
While waiting for the milk to cool, remove the lime and strawberry gelatin from the refrigerator. Cut into 1-inch squares and place in a 9 x 13-inch baking dish.
Pour the cooled milk mixture over the flavored gelatin squares.
Refrigerate for atleast 3 hours or until gelatin has set. Enjoy!
